Doesn't the Catholic church believe in miracles?

A little girl is unable to eat wheat gluten, so the Catholic church decides if she doesn't her communion is invalid. If they believe wheat wafers can be turned into the body of Christ, why don’t' they think rice wafers can be also?

If the girl eats gluten she could die. Isn't it the intent that makes it real?

I'd change religions if I were her family.
